This Valentine’s Day, as people everywhere give away sweets to show they care, The Campus Kitchen at St. Louis University will feed the hungry with a heart-healthy, soul food meal.
The Campus Kitchens students understand first hand how vital it is to not only provide clients with food but find ways to protect their health through their service. Last year, a regular client, only 40 years old, passed away from a heart attack. Students will not only provide a heart-healthy meal, they distribute the recipes to remake clients favorite soul dishes healthier and information on cardiac arrest and heart disease to help prevent future tragedies.
Student volunteers will create two dishes to feature for each partner. Choices included: low-fat greens, sweet potato salad, deep dish apple pie, red beans and rice, mac and cheese, black-eyed pea salad, yams, jerk chicken. See a few of the menus below.
Each meal will cost an estimated $5 to produce. During Valentine's day week students will serve over 300 meals to local St. Louis clients. Help support our program by donating a meal to one of our 300 clients. For just $5 you can work to help prevent future cardiac arrest and health problems in the community. Help us raise $1500 to support each meal distributed for Valentine's Day.
Macaroni and Cheese
2 cups elbow macaroni
1/2 cup grated reduced-fat cheddar cheese
1/3 cup skim milk
2 tablespoons sliced scallions
1 egg white, lightly beaten
1 tablespoon nonfat Parmesan cheese topping
Cook macaroni according to package instructions, and drain. Rinse macaroni and place in a large bowl and add the cheddar cheese, milk, scallions, and egg white. Stir well. Preheat oven to 375 F. Place the macaroni in a nonstick casserole pan and sprinkle Parmesan cheese on top. Bake 25 minutes or until the top is browned and firm.

Red Beans and Rice
2 cups dried kidney beans
1 pound skinless smoked turkey breast, cut up in cubes
1 cup chopped onion
1 tablespoon minced fresh garlic
1 tablespoon Soul Food Seasoning (see recipe)
1 teaspoon celery seeds
1 bay leaf
2 cups long-grain white rice
Sort and rinse the beans. Place beans in a pot with turkey breast, and add enough water to cover completely. Bring to a boil, then reduce heat to low; cover and simmer for 2 hours. Add onion, garlic, Soul Food Seasoning, celery seeds, and bay leaf and cook for 45 minutes. In a separate pot, bring 5 cups of water to a boil. Add rice, cover, reduce heat, and simmer for 20 minutes. Serve the beans over the rice or combine rice and beans in a large serving bowl.
